This chicken fajita recipe is easy to make in the slow cooker and is great for busy weeknights. In the morning, just put everything in the crock pot. When you get home, there will be a tasty meal ready to be served in tortillas with your favorite toppings.
Ingredients:

- 5 lbs boneless, skinless chicken breasts, sliced
- 3 bell peppers, sliced any color combination
- 1 large onion, sliced
- 1 packet fajita seasoning mix
- 1/4 cup chicken broth
- 1 tablespoon lime juice
- Tortillas, for serving
- Optional toppings: shredded cheese, sour cream, salsa, guacamole
Instructions:
Slice the chicken breasts and put them, along with the onion and bell peppers, in the slow cooker
Put chicken broth, lime juice, and fajita seasoning mix in a small bowl
Pour it over the slow-cooked chicken and vegetables
Cook on low for 4 to 6 hours or high for 2 to 3 hours, until the chicken is done and the vegetables are soft
After the chicken is cooked, put it in tortillas and top them with whatever you like, like sour cream, salsa, guacamole, or shredded cheese
