Ingredients:
- 8 slices of bacon, chopped
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cloves garlic, minced
- 1/4 cup bourbon
- 8 cups cubed bread day-old preferred
- 2 cups chicken broth
- 1/2 cup chopped fresh parsley
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
In a large skillet over medium heat, cook the chopped bacon until it becomes crispy
Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain
In the same skillet, add the diced onion, celery, carrots, and minced garlic
Cook for about 5 minutes until the vegetables soften
Pour in the bourbon and let it simmer for a couple of minutes, allowing the alcohol to cook off and the flavors to meld
In a large mixing bowl, combine the cubed bread, cooked bacon, sauted vegetables, chopped parsley, dried sage, and dried thyme
Toss everything together until well mixed
Gradually pour in the chicken broth, starting with 1 cup and adding more as needed, to moisten the stuffing to your desired consistency
Season with salt and pepper to taste
Preheat your oven to 350F 175C
Transfer the stuffing mixture into a greased baking dish and cover it with aluminum foil
Bake in the preheated oven for 25-30 minutes, removing the foil during the last 10 minutes to allow the top to become golden and crispy
Once the stuffing is cooked to your liking, remove it from the oven and let it cool for a few minutes before serving
