Watermelon Mint Lemonade



This watermelon mint lemonade is a great drink for the summer because it is cool and full of flavor.

Ingredients:

  • 4 cups cubed watermelon
  • 1/4 cup fresh lemon juice
  • 1/4 cup sugar
  • 1/4 cup fresh mint leaves
  • 2 cups cold water
  • Ice cubes optional
  • Mint sprigs and lemon slices for garnish optional

Instructions:

In a blender, combine watermelon, lemon juice, sugar, and mint leaves

Blend until smooth

Strain the mixture through a fine-mesh sieve into a pitcher

Stir in cold water

Refrigerate until chilled

Serve over ice cubes if desired

Garnish with mint sprigs and lemon slices

Creamy Cilantro Lime Chicken



Creamy cilantro lime chicken is a delicious and flavorful dish that combines tender chicken breasts with a rich and tangy cream sauce infused with cilantro and lime. It's a perfect meal for any occasion, easy to make and bursting with fresh flavors.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon red pepper flakes optional

Instructions:

On both sides, season chicken breasts with black pepper and salt

Warm up the olive oil in a big pan over medium-high heat

Before you add the chicken breasts, make sure both sides are golden brown

This should take about 5 to 6 minutes per side

Take the chicken out of the pan and set it aside

Add minced garlic to the same pan and cook for about one minute, until the garlic smells good

Add the chicken broth and scrape the pan's bottom to get rid of any browned bits

If you want, you can add red pepper flakes, heavy cream, chopped cilantro, lime juice, and lime zest

Bring to a low boil

Put the chicken breasts back in the pan and cook for another 5 to 7 minutes, until the chicken is fully cooked and the sauce has thickened

Serve the creamy cilantro lime chicken hot, and if you want, you can top it with more cilantro

Best Crock Pot Chicken Fajitas



This chicken fajita recipe is easy to make in the slow cooker and is great for busy weeknights. In the morning, just put everything in the crock pot. When you get home, there will be a tasty meal ready to be served in tortillas with your favorite toppings.

Ingredients:

  • 5 lbs boneless, skinless chicken breasts, sliced
  • 3 bell peppers, sliced any color combination
  • 1 large onion, sliced
  • 1 packet fajita seasoning mix
  • 1/4 cup chicken broth
  • 1 tablespoon lime juice
  • Tortillas, for serving
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole

Instructions:

Slice the chicken breasts and put them, along with the onion and bell peppers, in the slow cooker

Put chicken broth, lime juice, and fajita seasoning mix in a small bowl

Pour it over the slow-cooked chicken and vegetables

Cook on low for 4 to 6 hours or high for 2 to 3 hours, until the chicken is done and the vegetables are soft

Ingredients:

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

Preheat the oven to 400F 200C

Pat the chickpeas dry with a clean kitchen towel or paper towels to remove excess moisture

Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper
